Venues open late when menus, licences, and joinery all think they are first. Interior freeze has to happen before factory. Soft opening is part of the design programme, not a rumour.
Opening-Day Fitout Timeline
Turn a launch date into a sequence with owners, instead of hoping the last week will absorb every delay.

Freeze
A date without a freeze is a wish
Lock layout, equipment, and finishes. Changing the bar stone after carcasses are in production is how opening weeks vanish.
Licences and landlord comments sit on the same timeline. We cannot install into a legal argument.
- Named owner for every milestone
- Equipment list signed with the drawings
- Long-lead items ordered from the freeze
- A soft-opening buffer, not a hard party on snag day

Last fortnight
Protect clean, train, and test
Staff training in a dusty room is wasted. Sequence cleaning, then IT, then F&B set-up. Joinery snags should be a list, not a redesign.
We walk FOH and BOH separately. A beautiful dining room with a broken pass is not open.
- Snag FOH and BOH as two lists
- Test lights, AC, music, and power at night
- Do not add seats in the last three days
- Keep one decision maker on call
Use the opening-day countdown with a real freeze. Factory joinery is weeks, not a long weekend.
Only with a legal, safe, and staffed kitchen story. Guests remember the first meal.
Say so early. We can re-sequence factory batches. Silent delays at the end are the expensive kind.
